Deep purple and richly spiced, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in the fridge all season long. Dried elderberries are simmered low and slow with fresh ginger, Ceylon cinnamon, cloves, and turmeric until the liquid reduces into something intensely fragrant and beautifully concentrated. The whole process is naturally free of any fermentation or leavening ā no yeast involved at any stage ā making it a straightforward fit for anyone avoiding yeast without having to scrutinize a single label. Once the liquid cools to a gentle warmth, raw honey is stirred in to preserve its natural qualities and add a floral sweetness that balances the earthy spice. Pressing the berries through a fine-mesh strainer gets every last drop of that gorgeous juice out before it goes into the jar. It thickens slightly as it chills, turning into a glossy, spoonable syrup that's as satisfying to make as it is to use. Keep a jar in the refrigerator and you'll find yourself reaching for it again and again.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
