Deep purple and fragrant with warming spices, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. Dried elderberries simmer low and slow with fresh ginger, turmeric, Ceylon cinnamon, and cloves until the liquid reduces into a richly colored, intensely flavored concentrate. The key step is letting that liquid cool down before stirring in raw honey ā keeping the temperature gentle preserves everything that makes the honey worth using in the first place. Once strained and bottled, the syrup thickens beautifully as it chills, turning into a glossy, spoonable elixir that feels genuinely special. Every ingredient here is plant-based or naturally derived, so there's nothing to second-guess if you're keeping things meat- and animal-product-free beyond honey. It's the kind of homemade staple that beats anything you'd find on a store shelf, and knowing exactly what went into it makes it taste even better.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
