This deep-purple, jewel-toned syrup is one of those kitchen projects that feels almost magical ā dried elderberries, warming spices, and raw honey come together into something that tastes rich, complex, and genuinely good. The slow simmer draws out every bit of color and flavor from the berries, while ginger, turmeric, Ceylon cinnamon, and cloves layer in a warmth that's spiced without being sharp. Letting the liquid cool before stirring in the honey is a small but important step, keeping all that raw honey goodness intact. Every ingredient here is naturally grain-free and entirely free of rice or rice derivatives, so there's no label-scanning required ā just straightforward, wholesome pantry staples. The finished syrup thickens beautifully in the fridge and pours like something you'd find at a specialty wellness shop, except you made it yourself. Drizzle it over yogurt, stir it into sparkling water, or take it by the spoonful ā however you use it, a little jar of this goes a long way.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
