Deep purple and fragrant with warming spices, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. Dried elderberries simmer low and slow with fresh ginger, turmeric, Ceylon cinnamon, and cloves until the liquid reduces into a richly colored, intensely flavored concentrate that smells absolutely incredible. The raw honey goes in off the heat, which is an important step ā keeping it below a certain temperature preserves its natural qualities and rounds out the spice with a gentle floral sweetness. Straining and pressing the berries thoroughly is what gives you that glossy, jewel-toned syrup rather than a murky brew, so don't rush that part. It fits naturally into a plant-forward, seafood-friendly lifestyle since every ingredient here is entirely plant-based, with no hidden animal products to second-guess. A spoonful stirred into hot water, drizzled over yogurt, or taken straight from the jar makes this one of the most versatile things you can make from scratch at home.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
