Deep purple and richly aromatic, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. The combination of dried elderberries, fresh ginger, turmeric, Ceylon cinnamon, and cloves creates a warming, complex flavor that feels both ancient and completely craveable. Raw honey is stirred in off the heat to preserve its natural qualities, giving the finished syrup a smooth sweetness that balances the tartness of the berries beautifully. Many store-bought wellness syrups and spiced blends sneak in nutmeg as a background note, so making your own means you control every single ingredient in the jar. The process is straightforward ā a long, gentle simmer, a good press through a strainer, and a patient cool-down before the honey goes in. Once chilled, it thickens into a glossy, spoonable syrup that's as satisfying to make as it is to use.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
