Deep purple and richly spiced, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in the back of your fridge all season long. It's built on a short list of whole, recognizable ingredients ā dried elderberries, fresh ginger, turmeric, Ceylon cinnamon, cloves, and raw honey ā with absolutely nothing processed or cured in sight. That matters more than it might seem, because many store-bought wellness syrups and tonics sneak in preservatives that people following a nitrate- and nitrite-free lifestyle are specifically trying to avoid. Here, the honey acts as the natural preservative, and the long simmer coaxes every bit of color and flavor out of the berries before you strain it all into a clean, glossy syrup. The warm spice from the ginger and cloves plays beautifully against the earthy sweetness of the elderberries, making each spoonful feel genuinely indulgent rather than medicinal. Stirring the honey in after the liquid cools protects its raw qualities and keeps the whole recipe clean from start to finish. A jar of this in the fridge feels like a small act of self-care that actually tastes good.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
