Deep purple and fragrant with warming spices, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. Dried elderberries simmer low and slow with fresh ginger, turmeric, Ceylon cinnamon, and cloves until the liquid reduces into something rich, complex, and genuinely beautiful. Raw honey is stirred in off the heat to preserve its natural qualities, adding a floral sweetness that rounds out all those bold, earthy notes. The whole approach leans into whole, minimally processed ingredients ā no refined sugars, no additives ā which is exactly the kind of cooking this way of eating celebrates. A spoonful over yogurt, stirred into sparkling water, or taken straight from the jar feels like a small act of nourishment. It stores easily in the fridge and thickens into a glossy, spoonable syrup that looks as good as it tastes. Once you've made a batch, you'll wonder how you ever went without it.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
