Deep purple and richly aromatic, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. The combination of dried elderberries, fresh ginger, turmeric, Ceylon cinnamon, and cloves creates a warming, complex flavor that feels almost medicinal in the best possible way. Simmering everything low and slow lets the berries fully release their juice before the liquid gets strained into a silky, concentrated syrup. Raw honey is stirred in only after the liquid cools down, which is a deliberate and important step ā keeping it below a certain temperature preserves the honey's natural enzymes and beneficial properties that make it such a valued ingredient for gut and immune support. The result is a syrup that's free from refined sugars, artificial additives, and anything your digestive system has to work hard to process. Drizzle it over yogurt, stir it into warm water or tea, or take it straight by the spoonful ā it's genuinely delicious either way. A single batch fills a 16-ounce jar and keeps in the refrigerator, so you always have something nourishing within arm's reach.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
