Deep purple and richly spiced, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. It's built from a short list of whole, recognizable ingredients ā dried elderberries, fresh ginger, turmeric, Ceylon cinnamon, cloves, and raw honey ā with absolutely nothing added to bind, stabilize, or emulsify. That matters more than it sounds, because so many store-bought wellness syrups and immune tonics rely on additives and thickeners that people with emulsifier sensitivities have to carefully avoid. Here, the syrup thickens naturally as it chills, no shortcuts needed. The process is straightforward: simmer everything down until the liquid is deeply concentrated and the berries have given up all their color, strain it well, then stir in honey once the liquid has cooled enough to protect its raw goodness. The result is a glossy, warming syrup with layers of spice and a floral sweetness that tastes genuinely homemade. A spoonful stirred into hot water, drizzled over yogurt, or taken straight from the jar ā however you use it, you'll be glad you made a full jar.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
