Deep purple and richly spiced, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in the fridge all season long. Dried elderberries simmer low and slow with fresh ginger, turmeric, Ceylon cinnamon, and cloves until the liquid reduces into a concentrated, jewel-toned elixir that smells absolutely incredible. Raw honey is stirred in off the heat to preserve its natural qualities and bring a gentle sweetness that balances the earthy, warming spices perfectly. Many store-bought wellness syrups sneak in coconut-derived ingredients or use coconut sugar as a sweetener, so making your own means you know exactly what's in every spoonful. Every ingredient here is straightforward and easy to source ā no hidden additives, no fillers, just whole foods doing the work. The process is simple enough for a weeknight but feels genuinely satisfying, especially when you watch that gorgeous color deepen in the pot. Bottle it up, tuck it in the fridge, and it's ready to stir into warm water, drizzle over oatmeal, or take straight from the spoon.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
