Deep purple and fragrant with warming spices, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in the fridge all season long. Every ingredient here is whole and recognizable ā dried elderberries, fresh ginger, turmeric, Ceylon cinnamon, cloves, and raw honey ā with absolutely nothing synthetic hiding in the mix. That matters more than it might seem, because many store-bought wellness syrups and immune-support products rely on preservatives like BHA and BHT to extend shelf life, and tracking those additives on labels can be exhausting. Making it yourself means you control every single thing that goes into the jar. The slow simmer draws out the berries' deep, jammy color and concentrates all that spiced goodness before the raw honey is stirred in at just the right temperature to preserve its natural qualities. The result is a rich, glossy syrup that thickens beautifully as it chills and tastes far more complex than its short ingredient list suggests. A small jar of this in the door of your refrigerator feels like a genuinely satisfying thing to have made from scratch.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
