Deep purple and richly aromatic, this elderberry tonic syrup is the kind of thing you'll want to keep stocked in your fridge all season long. Every ingredient here is whole and recognizable ā dried elderberries, fresh ginger, turmeric, Ceylon cinnamon, cloves, and raw honey ā with absolutely nothing synthetic sneaking in. That matters more than you might think, because so many store-bought wellness syrups and immune tonics are loaded with artificial flavors, colors, and preservatives that have no business being in something you're taking for your health. Making it yourself means you control every single thing that goes into the jar. The slow simmer draws out that gorgeous, inky juice from the berries while the spices build a warming, complex depth that smells incredible as it cooks down. Stirring the honey in off the heat keeps its natural properties intact and gives the finished syrup a smooth, lightly floral sweetness. A batch stores beautifully in the fridge and thickens into a glossy, spoonable syrup that feels genuinely nourishing.

Combine the dried elderberries, water, ginger, turmeric, Ceylon cinnamon stick, and cloves in a medium saucepan. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 40ā45 minutes, until the liquid has reduced by roughly half and the berries are very soft and have released their deep purple color.
Remove the saucepan from the heat. Use a potato masher or the back of a wooden spoon to press the berries firmly against the side of the pan, extracting as much juice as possible.
