A serving of up to about 2 1/2 cups of baby spinach is low in FODMAPs. This recipe contains only about 1 1/4 cups per serving, making it likely Low FODMAP. If you prefer to always avoid baby spinach, please tap it and change its rating to Red.





Preheat the oven to 400°F (205°C). Arrange the eggplant planks in a single layer on one or two large baking sheets. Brush both sides with 2 tbsp of the olive oil and season with 1/4 tsp of the salt and the black pepper.
Roast the eggplant for 18–22 minutes, flipping once halfway through, until the planks are tender, lightly golden, and pliable enough to roll without cracking. Transfer to a wire rack and let cool for 5 minutes. Reduce the oven temperature to 375°F (190°C).
