Heat a large deep 12-inch skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through with no pink remaining, about 6–8 minutes. Reach 160°F (71°C) on an instant-read thermometer at the center of the largest pieces. Tilt the pan and spoon off all but about 1 tbsp of the rendered fat.
Add the onion to the skillet and cook over medium heat, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 1 minute.
