Preheat the oven to 450°F (230°C). Line a large baking sheet with parchment paper.
Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the sausage and cook, breaking it into small crumbles, for 5–7 minutes until browned throughout with no pink remaining. Transfer to a plate lined with paper towels and let cool for 5 minutes.
