This Egyptian spice-and-nut blend is one of those pantry staples that quietly transforms everything it touches — crusty bread dipped in olive oil, roasted vegetables, grilled chicken, even a soft-boiled egg. Every ingredient here is whole and unprocessed: raw hazelnuts, sesame seeds, and whole spices that you toast yourself, so there's nothing hidden in the mix and no additives to second-guess. That matters a lot when you're avoiding thickeners and stabilizers that sneak into pre-made spice blends and seasoning mixes at the store. Toasting each component separately coaxes out deep, nutty, aromatic layers that a pre-ground blend simply can't replicate. The key is restraint with the food processor — short pulses keep the texture coarse and sandy rather than turning the whole thing into a paste, and that rustic crunch is exactly what makes dukkah so satisfying. A pinch of optional dried thyme adds a subtle herbal note if you want it, but the base recipe is already beautifully complex on its own. Make a jar, keep it on the counter, and watch it disappear faster than you'd expect.

Spread the hazelnuts on a dry baking sheet and toast in a 350°F (175°C) oven for 10–12 minutes, until the skins are cracked and the nuts are deep golden beneath the skin.
Transfer the hot hazelnuts to a clean kitchen towel, fold the towel over them, and rub vigorously for about 1 minute to remove as much of the papery skin as possible. Let the nuts cool for 5 minutes.
