This Egyptian spice-and-nut blend is one of those condiments that quietly transforms everything it touches — warm bread dipped in olive oil and dragged through a little pile of this stuff is genuinely hard to stop eating. The base is toasted hazelnuts blitzed with coriander, cumin, sesame seeds, and black pepper, creating a coarse, sandy mixture that's earthy, nutty, and deeply aromatic all at once. Every ingredient gets individually toasted before it hits the food processor, which is the move that makes the final blend taste so layered and complex. The key is keeping the texture rough and crumbly rather than smooth — short pulses are your friend here, and the recipe is very clear about not overdoing it. Because this blend is built entirely around hazelnuts and seeds, it naturally sidesteps tree nuts like pecans without any substitutions or workarounds required. It keeps well in a jar for weeks, so you can make a batch and reach for it whenever you need to finish a dish — sprinkle it over roasted vegetables, yogurt, eggs, or grilled meat and it instantly feels like you did something special.

Spread the hazelnuts on a dry baking sheet and toast in a 350°F (175°C) oven for 10–12 minutes, until the skins are cracked and the nuts are deep golden beneath the skin.
Transfer the hot hazelnuts to a clean kitchen towel, fold the towel over them, and rub vigorously for about 1 minute to remove as much of the papery skin as possible. Let the nuts cool for 5 minutes.
