This Egyptian spice-and-nut blend is one of those pantry staples that quietly transforms everything it touches — warm bread dipped in olive oil and dukkah, roasted vegetables, grilled meat, even a soft-boiled egg. Every ingredient here is naturally free of gluten, so there's no need to hunt down specialty substitutes or scrutinize labels; it's just whole nuts, seeds, and spices doing exactly what they're supposed to do. The process is all about coaxing out deep, toasty flavor through careful dry-roasting, and the kitchen will smell absolutely incredible while you work. Rubbing the skins off the hazelnuts after toasting is a small step that makes a big difference, giving the final blend a cleaner, more refined texture. A food processor makes quick work of it, but a mortar and pestle gives you even more control over that signature coarse, sandy crunch — just stop well before it turns into a paste. A pinch of dried thyme is optional but adds a subtle herbal note that rounds out the warmth of the coriander and cumin beautifully. Stored in a jar on your counter, it's ready to elevate snacks and meals for weeks.

Spread the hazelnuts on a dry baking sheet and toast in a 350°F (175°C) oven for 10–12 minutes, until the skins are cracked and the nuts are deep golden beneath the skin.
Transfer the hot hazelnuts to a clean kitchen towel, fold the towel over them, and rub vigorously for about 1 minute to remove as much of the papery skin as possible. Let the nuts cool for 5 minutes.
