This Egyptian spice-and-nut blend is one of those pantry staples that quietly transforms everything it touches — crusty bread dipped in olive oil, roasted vegetables, grilled chicken, or even a soft-boiled egg. The combination of toasted hazelnuts, sesame seeds, coriander, and cumin creates a deeply aromatic, nutty crunch that is impossible to stop reaching for. Because it is made entirely from whole seeds, nuts, and spices that you toast and grind yourself, there are no hidden additives or stabilizers to worry about — just clean, real ingredients from start to finish. That matters more than it might seem, since many store-bought spice blends and seasoning mixes sneak in fillers or emulsifiers that have no business being there. The technique here is straightforward: toast each component separately to coax out its best flavor, then pulse everything together just enough to get that signature coarse, sandy texture. Resist the urge to over-process — the chunky, uneven crumble is exactly what makes it so satisfying to eat. A jar of this on your counter will get used faster than you expect.

Spread the hazelnuts on a dry baking sheet and toast in a 350°F (175°C) oven for 10–12 minutes, until the skins are cracked and the nuts are deep golden beneath the skin.
Transfer the hot hazelnuts to a clean kitchen towel, fold the towel over them, and rub vigorously for about 1 minute to remove as much of the papery skin as possible. Let the nuts cool for 5 minutes.
