This Egyptian spice-and-nut blend is one of those pantry staples that makes everything it touches taste more interesting — from torn bread dipped in olive oil to roasted vegetables, soft-boiled eggs, or even a simple bowl of hummus. The magic here is entirely in the toasting: hazelnuts go into the oven until deeply golden, whole spices hit a dry skillet until they bloom and darken, and sesame seeds follow until they're nutty and fragrant. That layered, hands-on process is exactly what gives dukkah its complex, earthy depth. Because every ingredient is a single whole food — seeds, nuts, salt, and spice — there's no need to scan labels for synthetic preservatives like BHA or BHT, which commonly sneak into pre-blended spice mixes and roasted nut products at the store. The food processor does the final work in just a few short pulses, keeping the texture coarse and sandy rather than smooth, which is precisely what you want. A jar of this on the counter will quietly upgrade your cooking for weeks.

Spread the hazelnuts on a dry baking sheet and toast in a 350°F (175°C) oven for 10–12 minutes, until the skins are cracked and the nuts are deep golden beneath the skin.
Transfer the hot hazelnuts to a clean kitchen towel, fold the towel over them, and rub vigorously for about 1 minute to remove as much of the papery skin as possible. Let the nuts cool for 5 minutes.
