Chef's tip
Use plain, unsweetened oat milk, measured 1:1. It works well in drinks, batters, sauces, and soups; avoid it where milk sets the texture, like custards, puddings, and frozen desserts.
¼ tsp kosher salt
¼ tsp black pepper
1 tbsp unsalted butter, divided
Chef's tip
Use a stick or block-style dairy-free butter - not a soft tub spread - and swap one-for-one.
½ cup green bell pepper, finely diced
⅓ cup yellow onion, finely diced
4 oz deli ham, diced into ¼-inch pieces
½ cup cheddar cheese, shredded
Chef's tip
Shred it and warm it gently; dairy-free cheddar melts best baked into a dish.

Instructions

1
Crack the eggs into a mixing bowl, add the milk, salt, and pepper, and whisk vigorously until the yolks and whites are fully combined and the mixture is uniform in color with no streaks.
2
Heat 1/2 tbsp of the butter in a 10-inch nonstick skillet over medium heat until the foam subsides. Add the green bell pepper and onion and cook, stirring occasionally, until softened and the onion is translucent, about 4–5 minutes.
