This deeply savory Japanese stock is built from just three ingredients β cold water, kombu, and katsuobushi β yet the flavor it produces is extraordinary. That clean, oceanic umami is the backbone of countless Japanese dishes, and making it from scratch means you control exactly what goes into it. Both kombu and bonito flakes are naturally compliant with Whole30 guidelines, so there's no need to scrutinize labels or worry about hidden additives sneaking into your broth. The technique here is all about patience and gentle heat: soaking the kombu slowly, warming it without boiling, and letting the bonito flakes steep undisturbed so you pull out every bit of delicate flavor without any bitterness. Straining without pressing is a small but crucial step that keeps the finished stock silky and pure. Once you have a batch in the fridge, you'll find yourself reaching for it constantly β as a base for soups, a braising liquid, or a simple sipping broth on a cold afternoon.

Combine the cold water and kombu in a medium saucepan. Let the kombu soak at room temperature for 30 minutes, until the water turns a pale straw-yellow and the kombu has softened and expanded slightly.
Place the saucepan over medium-low heat and warm slowly, uncovered, until the water reaches a bare simmer β small bubbles will begin to rise from the bottom of the pan, about 10 minutes. Do not let it reach a full boil; remove the kombu just before the first rolling bubbles appear, as boiling makes the stock bitter and slimy.
