Chef's tip
Choose a gluten-free baking blend labeled 1:1 or cup-for-cup and use the same amount. Almond and coconut flour won't work the same way.
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup dairy free milk
1 tbsp white vinegar
1 cup granulated sugar
½ cup vegetable oil
1 large egg
1 tsp vanilla extract

For the filling

½ cup dairy free butter, softened
1 cup vegetable shortening
3 cups powdered sugar, sifted
2 tsp vanilla extract
2–3 tbsp dairy free milk

Instructions

1
Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
2
Stir together the dairy free milk and white vinegar in a small bowl or measuring cup and set aside for 5 minutes until slightly curdled.
