For the filling

3 tbsp olive oil
1 medium yellow onion, finely diced
3 cloves garlic, minced
3 medium carrots, peeled and cut into ½-inch pieces
3 stalks celery, cut into ½-inch pieces
2 medium yukon gold potatoes, peeled and cut into ¾-inch cubes
1 cup frozen peas
⅓ cup all-purpose flour
2 cups vegetable broth
1 cup dairy free milk, unsweetened
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
½ tsp dried rosemary
½ tsp salt, plus more to taste
¼ tsp black pepper, plus more to taste

Instructions

1
Preheat the oven to 400°F (205°C). If using refrigerated pie crust, let it sit at room temperature for 10 minutes to make it pliable.
2
Heat the olive oil in a large oven-safe skillet or Dutch oven over medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add the garlic and cook, stirring constantly, until fragrant, about 1 minute.
