Chef's tip
Choose a gluten-free baking blend labeled 1:1 or cup-for-cup and use the same amount. Almond and coconut flour won't work the same way.
2 tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup dairy free butter, softened
1 ½ cups granulated sugar
3 large eggs, room temperature
2 tsp vanilla extract
1 cup dairy free milk, room temperature
1 tbsp apple cider vinegar

For the frosting

1 cup dairy free butter, softened
3 ½ cups powdered sugar, sifted
2 tsp vanilla extract
3–4 tbsp dairy free milk
1 pinch salt

Instructions

1
Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
2
In a small bowl or measuring cup, stir together the dairy free milk and apple cider vinegar and set aside for 5 minutes until slightly curdled.
