Chef's tip
Choose a gluten-free baking blend labeled 1:1 or cup-for-cup and use the same amount. Almond and coconut flour won't work the same way.
½ tsp baking powder
¼ tsp salt
¾ cup dairy free butter, softened
¾ cup granulated sugar
1 large egg
1 ½ tsp vanilla extract

For the icing

2 cups powdered sugar, sifted
3–4 tbsp dairy free milk
½ tsp vanilla extract
food coloring (optional)

Instructions

1
Whisk together the flour, baking powder, and salt in a medium bowl until evenly combined. Set aside.
2
Beat the softened dairy free butter and granulated sugar together in a large bowl with a stand mixer or hand mixer on medium speed until pale and fluffy, about 3 minutes.
