Place the potato chunks in a large pot and cover with cold salted water by at least 1 inch. Bring to a boil over high heat, then reduce to a steady simmer and cook until the potatoes are completely tender and a fork slides through without resistance, about 15–18 minutes. Drain well.
Return the drained potatoes to the pot and set over low heat for 1–2 minutes, shaking the pot occasionally, until any surface moisture has evaporated. Remove from heat. Add the olive oil and warmed dairy free milk, then mash until smooth and creamy with no lumps. Season with 1 tsp salt and 1/4 tsp black pepper, then taste and adjust. Set aside.
