Gut friendly eating may limit alcohol because it can irritate the gut, but this recipe uses only ~1 1/2 tablespoons of sherry wine per serving and it is simmered down, which cooks off much of the alcohol, so the amount remaining is likely fine for many people. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat until shimmering. Add the onion, celery, and carrot and cook, stirring occasionally, until softened and the onion is translucent, about 6–8 minutes.
Add the garlic and tomato paste and cook, stirring constantly, until the garlic is fragrant and the tomato paste has darkened slightly, about 2 minutes. Watch closely so the garlic does not scorch.
