4 garlic cloves, thinly sliced
1 cup cherry tomatoes
1 can (14 oz) artichoke hearts, drained and halved
Chef's tip
Choose canned artichoke hearts in water, not marinated.
½ cup pitted kalamata olives
½ cup low-sodium chicken broth
1 lemon, thinly sliced into rounds
2 tbsp fresh lemon juice (from about 1 lemon)
2 tbsp fresh parsley, roughly chopped (optional)

Instructions

1
Preheat the oven to 425°F (220°C). Pat the chicken thighs completely dry with paper towels, then season all over with the salt, pepper, dried oregano, and smoked paprika.
2
Heat 2 tbsp of the olive oil in a 12-inch oven-safe skillet over medium-high heat until shimmering. Add the chicken thighs skin-side down and sear undisturbed for 6–7 minutes, until the skin is deep golden and releases easily from the pan. Flip and sear the second side for 2 minutes, then transfer the chicken to a plate.
