Make the tzatziki: Grate the cucumber on the large holes of a box grater, then transfer to a fine-mesh strainer or a clean kitchen towel and squeeze firmly until most of the liquid is removed. In a medium bowl, stir together the coconut yogurt, squeezed cucumber, lemon juice, olive oil, garlic, dill, and salt until combined. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
