This sparkling cooler is the kind of drink that makes you feel like you're sitting on a shaded patio somewhere wonderful, even if you're just standing at your kitchen counter. Fresh cucumber is blended and strained into a clean, pale green base, then brightened with real lime juice and a homemade mint syrup built from maple syrup and steeped fresh leaves. The result is floral, cooling, and just sweet enough β nothing artificial, nothing mysterious on the label. Warm-weather spice blends and pre-made drink mixes can sneak in all kinds of unexpected additions, so making this from scratch means you know exactly what's in your glass. The mint syrup comes together in minutes and the whole pitcher chills quickly, so it's genuinely low-effort for how impressive it looks. Top each glass with a sprig of fresh mint and a lime wheel and it's practically begging to be photographed. Whether you're serving a crowd or just treating yourself, this is a refreshing, fuss-free pour that delivers every single time.

Combine the maple syrup and 1/4 cup water in a small saucepan over medium heat, stirring until the syrup dissolves, about 2 minutes. Remove from heat, add the mint leaves, and stir to submerge. Let steep for 20 minutes, then strain through a fine-mesh strainer into a small bowl, pressing the leaves to extract as much liquid as possible. Discard the spent mint. Let the syrup cool to room temperature.
Add the chopped cucumber and 1 cup cold water to a blender. Blend on high until completely smooth, about 30 seconds. Pour through the fine-mesh strainer into a pitcher, pressing the solids with the back of a spoon to extract all the liquid. Discard the solids.
