2 tbsp maple syrup
Chef's tip
Use the same amount; honey is a little thicker and slightly sweeter.
1 tbsp dijon mustard
1 tbsp fresh lemon juice
½ tsp fine salt
¼ tsp black pepper, freshly ground
½ cup extra-virgin olive oil
¼ tsp dried thyme (optional)

Instructions

1
In a small bowl, combine the balsamic vinegar, maple syrup, Dijon mustard, lemon juice, salt, pepper, and dried thyme, if using. Whisk together until the salt dissolves and the mixture is uniform.
2
While whisking constantly, pour in the olive oil in a slow, steady stream until the dressing is emulsified and slightly thickened — it should coat the back of a spoon and look glossy rather than separated.
