Few dishes hit the table with as much soul as a slow-simmered corned beef with tender vegetables, and this stovetop version is the real deal. Every bit of flavor here comes from honest, whole ingredients — the brisket, the aromatics, the spice packet — with no synthetic shortcuts hiding anywhere in the pot. That matters more than you might think, because plenty of packaged seasonings and store-bought broth bases sneak in artificial flavoring agents that have no business being in a classic like this. Here, the depth comes from whole black peppercorns, mustard seeds, smashed garlic, and bay leaves doing exactly what they were meant to do. The brisket braises low and slow until it's genuinely fork-tender, and that same rich, savory broth then cooks the baby Yukon Golds, carrots, and cabbage wedges until everything is silky and deeply flavored. A spoonful of that cooking liquid ladled over the platter at the end ties it all together in the most satisfying way. Finish with a swipe of whole-grain mustard and a handful of fresh parsley, and you've got a centerpiece meal that's as clean and unfussy as it is comforting.

Place the corned beef brisket fat-side up in a large Dutch oven or stockpot. Scatter the onion, garlic, bay leaves, peppercorns, mustard seeds, and the contents of the spice packet around the meat. Add enough cold water to cover the brisket by at least 1 inch — typically 10–12 cups.
Bring the pot to a boil over high heat, then reduce the heat to low, cover, and simmer for 2 hours 30 minutes to 3 hours, until the brisket is fork-tender and an instant-read thermometer inserted into the thickest part reads at least 195°F (90°C). The meat should yield easily when pressed with tongs.
