Whisk together the gluten free flour, salt, and pepper in a shallow dish. Dredge each cod fillet in the flour mixture, pressing lightly to coat both sides, then shake off any excess.
Heat 2 tablespoons of the garlic-infused oil in a 12-inch skillet over medium-high heat until shimmering. Add the cod fillets and cook undisturbed for 3–4 minutes, until the underside is golden and the fillet releases easily from the pan. Flip and cook for another 2–3 minutes, until the fish reaches 145°F (63°C) on an instant-read thermometer and is opaque throughout. Transfer the fillets to a plate and tent loosely with foil.
