Cooking fish at home doesn't have to mean a lingering smell in the kitchen or a dry, overcooked fillet — this parchment method solves both problems at once. Each piece of cod gets nestled on a bed of zucchini and cherry tomatoes, layered with lemon rounds, fresh thyme, scallion greens, and parsley, then sealed into its own little steam pocket with a splash of white wine and garlic-infused oil. The result is incredibly moist, flaky fish that essentially braises in its own aromatic juices. Because everything is built from whole, fresh ingredients with no spice blends or pre-made sauces, it's naturally free from hidden additives — what you see in the parcel is exactly what you get. Opening one of these puffed parcels at the table feels genuinely theatrical, and the rush of herby, lemony steam is half the experience. It's an elegant weeknight dinner that looks far more impressive than the effort involved.

Preheat the oven to 400°F (205°C). Cut four sheets of parchment paper, each about 15 inches long. Fold each sheet in half crosswise to crease the center, then open them flat on a baking sheet.
Arrange a few zucchini rounds in a single layer on one half of each parchment sheet, just off the center crease. Scatter a quarter of the cherry tomatoes over the zucchini on each sheet.
