Cooking fish in parchment is one of those techniques that feels fancy but is genuinely forgiving, and this version delivers beautifully flaky cod surrounded by bright cherry tomatoes, tender zucchini, and fragrant herbs. The garlic-infused oil does the heavy lifting here — it bastes the fish as it steams, infusing every bite with richness without relying on any of the industrially processed vegetable or seed oils that sneak into so many restaurant and store-bought meals. Fresh thyme, parsley, scallion greens, and lemon rounds layer in aromatics that make the whole kitchen smell incredible while the parcels puff up in the oven. A small splash of dry white wine adds just enough acidity to lift the whole dish and keep the vegetables from feeling heavy. The sealed parchment traps all that steam and flavor together, so the cod stays impossibly moist and the tomatoes collapse into a light, jammy sauce right on the plate. Opening your own parcel at the table is a genuinely fun moment — there's a little rush of fragrant steam and then this gorgeous, restaurant-worthy piece of fish waiting underneath. It's a clean, confident weeknight dinner that proves eating well doesn't have to mean sacrificing any of the good stuff.

Preheat the oven to 400°F (205°C). Cut four sheets of parchment paper, each about 15 inches long. Fold each sheet in half crosswise to crease the center, then open them flat on a baking sheet.
Arrange a few zucchini rounds in a single layer on one half of each parchment sheet, just off the center crease. Scatter a quarter of the cherry tomatoes over the zucchini on each sheet.
