Cooking fish in parchment is one of those techniques that feels fancy but is genuinely forgiving, and the results are absolutely stunning. Each fillet steams gently inside its sealed pouch alongside zucchini rounds, burst cherry tomatoes, fragrant thyme, and bright lemon slices — all brought together with a drizzle of garlic-infused oil and a splash of dry white wine. The en papillote method traps every drop of juice and herb-scented steam, so the cod comes out impossibly tender and flaky without any risk of drying out. Because everything is built from whole, fresh ingredients, there's no need to scrutinize labels or worry about hidden additives sneaking into your meal. Crimping the parchment into a tight half-moon seal is easier than it sounds, and watching the pouches puff up golden in the oven is genuinely satisfying. Opening one at the table releases a cloud of fragrant steam that makes the whole thing feel like a restaurant moment — no special occasion required. Finish with a squeeze of the reserved lemon wedges and you have a clean, vibrant dinner that's as effortless as it is impressive.

Preheat the oven to 400°F (205°C). Cut four sheets of parchment paper, each about 15 inches long. Fold each sheet in half crosswise to crease the center, then open them flat on a baking sheet.
Arrange a few zucchini rounds in a single layer on one half of each parchment sheet, just off the center crease. Scatter a quarter of the cherry tomatoes over the zucchini on each sheet.
