Pat the turkey cutlets dry with paper towels. In a small bowl, stir together the salt, ginger, and turmeric, then rub the mixture evenly over both sides of each cutlet.
Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add the turkey cutlets in a single layer and cook undisturbed for 4–5 minutes, until the underside is golden and releases easily from the pan. Flip and cook for another 3–5 minutes, until the internal temperature reaches 165°F (74°C) on an instant-read thermometer. Transfer to a cutting board and let rest for 10 minutes.
