Preheat the oven to 400°F (205°C). Place the scrubbed beets on a sheet of parchment paper on a baking sheet, drizzle with 1 tbsp olive oil, and sprinkle with 1/4 tsp salt. Wrap the parchment loosely around the beets to form a packet and fold the edges to seal.
Roast the beets until a paring knife slides into the center of the largest beet with no resistance, 40–50 minutes. Open the packet carefully and let the beets cool on the baking sheet for 15 minutes, until cool enough to handle.
