Pat the salmon fillets completely dry with paper towels, then season both sides with salt and black pepper.
Combine the coconut aminos, apple cider vinegar, grated ginger, minced garlic, sesame oil, and red pepper flakes (if using) in a small saucepan over medium heat. Cook, stirring occasionally, until the glaze reduces by about one-third and coats the back of a spoon, 4–5 minutes. Watch closely near the end, as the sugars in the coconut aminos can scorch quickly. Remove from heat and set aside.
