Salmon is one of those proteins that genuinely thrives under a good glaze, and this version delivers serious depth of flavor without leaning on any of the usual problematic ingredients. Coconut aminos stand in for soy sauce beautifully — they bring that savory, slightly sweet complexity while staying free of the fermented soy that can be tricky when you're managing yeast overgrowth. Fresh ginger and garlic round out the glaze with real, whole-food heat rather than anything processed or sugar-laden. The technique is straightforward: get the skin impossibly crisp in a hot skillet, flip once, then let that glossy glaze cling to the fish in the final thirty seconds of cooking. A splash of apple cider vinegar keeps the whole thing bright and balanced. It comes together fast enough for a weeknight but looks impressive enough to serve to guests, and at four servings it's easy to scale up if needed. Finish with scallions and sesame seeds and you've got a plate that looks like it came from a restaurant — no compromises required.

Coconut aminos is a common stand-in for soy sauce on a candida diet. It does carry a little sugar from coconut sap, but this recipe uses only about 1 1/2 tablespoons per serving, which is likely fine.

Pat the salmon fillets completely dry with paper towels, then season both sides with salt and black pepper.
Combine the coconut aminos, apple cider vinegar, grated ginger, minced garlic, sesame oil, and red pepper flakes (if using) in a small saucepan over medium heat. Cook, stirring occasionally, until the glaze reduces by about one-third and coats the back of a spoon, 4–5 minutes. Watch closely near the end, as the sugars in the coconut aminos can scorch quickly. Remove from heat and set aside.
