Rich, slow-braised pulled pork doesn't need a drop of dairy to be deeply satisfying, and this recipe proves it in the most delicious way possible. A bone-in pork shoulder gets rubbed with turmeric and ginger, seared until deeply caramelized, then left to braise low and slow in a braising liquid built on coconut aminos, bone broth, apple cider vinegar, and honey — layers of savory, tangy, and subtly sweet that soak all the way into every shred of meat. The coconut aminos do a lot of heavy lifting here, bringing a mellow umami depth that makes the whole dish taste like it took far more effort than it did. After eight hours in the slow cooker, the collagen breaks down completely and the pork practically falls apart at the touch of a fork. Skimming the braising liquid and tossing the shredded meat back into those juices is the move that takes it from good to genuinely craveable. Finish with scallions and fresh cilantro for a bright pop of color and flavor, and you've got a crowd-pleasing centerpiece that happens to be completely free of dairy in any form.

Pat the pork shoulder completely dry with paper towels. In a small bowl, stir together the salt, 1 tsp turmeric, and ground ginger, then rub the mixture evenly over all surfaces of the pork.
Heat the coconut oil in a 12-inch skillet over medium-high heat until shimmering. Add the pork shoulder and sear, turning with tongs, for 3–4 minutes per side until deeply browned on all surfaces. Transfer the seared pork to a 6-quart slow cooker.
