Braised short ribs have a reputation for being rich, indulgent comfort food — and this version delivers every bit of that without a drop of butter, cream, or any other dairy in sight. The magic comes from a braising liquid built on coconut aminos, pomegranate juice, and apple cider vinegar, which together create a deeply savory, slightly sweet, and tangy sauce that reduces into something genuinely restaurant-worthy. A dry rub of sea salt, ground ginger, and turmeric gives the meat a gorgeous mahogany crust during the initial sear, locking in flavor before the long, slow oven braise does its work. Aromatics like smashed garlic, fresh ginger, thyme, and rosemary perfume the whole pot as it cooks low and slow, so your kitchen is going to smell incredible for hours. By the time the ribs hit 195°F and the collagen has fully broken down, the meat is so tender it practically falls from the bone on its own. The strained, reduced sauce is the finishing touch — glossy, concentrated, and complex enough that nobody at the table will be thinking about what's missing. A scatter of fresh parsley at the end keeps things bright and pulls the whole dish together beautifully.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels. In a small bowl, combine the salt, ground ginger, and turmeric, then rub the mixture evenly over all sides of the ribs.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Working in two batches to avoid crowding, sear the short ribs for 3–4 minutes per side, until a deep mahogany crust forms and the meat releases easily from the pot. Transfer the seared ribs to a plate and set aside.
