Braised short ribs are the kind of low-and-slow comfort food that makes the whole house smell incredible, and this version delivers deep, fall-off-the-bone richness without a single nut in sight. The braising liquid is where the magic really happens — coconut aminos bring a savory, slightly sweet depth, while pomegranate juice and apple cider vinegar add brightness that keeps the sauce from feeling heavy. A rub of ground ginger and turmeric gives the meat a warm, aromatic crust before it ever hits the pot, and searing in coconut oil builds that gorgeous mahogany color that signals serious flavor. Fresh thyme, rosemary, garlic, and grated ginger layer in herbal complexity as everything braises low and slow at 325°F for nearly three hours. By the time the ribs are done, the collagen has fully broken down and the meat pulls away from the bone with almost no effort. The reduced pan sauce — strained, concentrated, and spooned right over the top — is honestly the kind of thing you'll want to soak up with something good. It's an impressive centerpiece dish that comes together with straightforward ingredients and very little hands-on time.

Preheat the oven to 325°F (165°C). Pat the short ribs completely dry with paper towels. In a small bowl, combine the salt, ground ginger, and turmeric, then rub the mixture evenly over all sides of the ribs.
Heat the coconut oil in a large Dutch oven over medium-high heat until shimmering. Working in two batches to avoid crowding, sear the short ribs for 3–4 minutes per side, until a deep mahogany crust forms and the meat releases easily from the pot. Transfer the seared ribs to a plate and set aside.
