There is something deeply satisfying about pulling a pan of golden, pillowy rolls from the oven, and these classic yeast rolls deliver exactly that kind of comfort. Every ingredient here is straightforward and whole — milk, flour, butter, egg, yeast, sugar, and salt — so you never have to second-guess what's going into your bread or worry about hidden additives lurking in a store-bought bag. The double butter treatment, once before baking and once right out of the oven, gives the tops a rich, glossy finish and a flavor that is genuinely hard to beat. Kneading the softened butter directly into the dough is the move that makes these rolls so tender and soft all the way through, rather than dense or bready in the wrong way. They puff up beautifully in the pan, pressing against each other as they rise so you get those irresistible pull-apart edges. Serve them warm straight from the pan and watch them disappear before they even have a chance to cool.

Warm the milk in a small saucepan over low heat until it reaches 105–110°F (40–43°C) on a kitchen thermometer — warm to the touch but not hot. Pour into the bowl of a stand mixer, sprinkle the yeast and 1 tbsp of the sugar over the surface, and let stand for 5–10 minutes until foamy and fragrant.
Add the remaining 2 tbsp sugar, the salt, and the egg to the yeast mixture. Add the flour and mix on low speed with the dough hook until a shaggy dough forms, about 2 minutes.
