Soft, pillowy, and golden-brown straight from the oven, these classic yeast rolls are the kind of bake that makes everyone hover near the kitchen. The ingredient list is refreshingly short and completely straightforward — whole milk, butter, flour, egg, yeast, sugar, and salt. No flavor packets, no enhancers, no mystery additives that sneak into store-bought dinner rolls and packaged mixes. Every bit of flavor here comes from the fermentation of the yeast, the richness of real butter, and a proper bake until deeply golden. The double butter treatment — brushed on before baking and again the moment they come out of the oven — gives the tops that irresistible glossy, slightly crisp finish. They pull apart beautifully at the table, soft and tender all the way through, and taste exactly like rolls are supposed to taste. Whether you're serving them alongside a weeknight dinner or a holiday spread, these are the real thing.

Warm the milk in a small saucepan over low heat until it reaches 105–110°F (40–43°C) on a kitchen thermometer — warm to the touch but not hot. Pour into the bowl of a stand mixer, sprinkle the yeast and 1 tbsp of the sugar over the surface, and let stand for 5–10 minutes until foamy and fragrant.
Add the remaining 2 tbsp sugar, the salt, and the egg to the yeast mixture. Add the flour and mix on low speed with the dough hook until a shaggy dough forms, about 2 minutes.
