Ingredients

4 servings

For the turkey loaf

1 lb ground turkey
½ medium yellow onion, roughly chopped
4 cloves garlic, roughly chopped
1 tsp dried oregano
Ingredient note
Herbs and spices can carry nickel, so a low nickel diet limits them, but the small amount of oregano used to season this recipe is likely fine. If you prefer to always avoid oregano, please tap it and change its rating to Red.
1 tsp ground cumin
½ tsp smoked paprika
½ tsp ground coriander

½ tsp salt
¼ tsp black pepper
1 tbsp olive oil

For the tzatziki

1 cup plain whole-milk greek yogurt
½ medium cucumber, grated and squeezed dry
1 clove garlic, finely grated
1 tbsp fresh lemon juice
1 tbsp fresh dill, finely chopped
¼ tsp salt

For serving

4 pita breads
2 medium roma tomatoes, thinly sliced
½ small red onion, thinly sliced
¼ cup crumbled feta cheese (optional)

Instructions

1
Preheat the oven to 325°F (165°C). In a food processor, combine the onion and garlic and pulse until very finely minced, about 10 one-second pulses, scraping down the sides once.
2
Transfer the onion-garlic mixture to a clean kitchen towel or several layers of paper towels and squeeze firmly to remove as much moisture as possible — the mixture should feel nearly dry to the touch.
