Crispy, golden cubes of tofu are the star here, pan-fried until deeply browned and coated in a glossy soy-ginger sauce that clings to every bite. Bright broccoli florets, snappy peas, and sweet red bell pepper get charred just enough in a screaming-hot skillet to keep their crunch, then everything comes together with garlic, fresh ginger, and a touch of honey for balance. The sauce itself is simple pantry stuff — soy sauce, rice vinegar, sesame oil — whisked together and thickened right in the pan so it clings rather than pools. Spoon the whole thing over a bowl of fluffy white rice and finish with scallions and sesame seeds for crunch and color. It's a fast, weeknight-friendly stir-fry that's naturally at home on a vegetarian table, no fuss required. Between the crispy tofu and all those vibrant vegetables, this one delivers plenty of texture and flavor without any meat in sight.

Drain the tofu and press it dry: wrap the block in several layers of paper towels, set a heavy skillet or cutting board on top, and let it press for 15 minutes. Cut the pressed tofu into 1-inch cubes.
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, 1 tsp cornstarch, and red pepper flakes, if using, until smooth. Set aside.
