Combine the strawberries, 1/2 cup sugar, and 1/2 cup water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the strawberries soften and release their juices, about 5–7 minutes.
Remove the pan from the heat and let the syrup cool for 5 minutes, then pour it through a fine-mesh strainer into a bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 20–25 minutes.
