Bright, tangy, and flushed with the color of fresh summer berries, this strawberry lemonade is the kind of drink that makes you want to sit on a porch and do absolutely nothing productive. The strawberry syrup is made by gently simmering real fruit with sugar and water, then straining it into a silky, jewel-toned liquid that blends beautifully with freshly squeezed lemon juice. No concentrates, no store-bought mixes, and โ crucially โ none of the thickeners and stabilizers that sneak into so many packaged beverages and flavored syrups. Carrageenan shows up in a surprising number of commercial drinks and dairy-adjacent products, so making your own from scratch is genuinely the cleanest route. Every ingredient here is exactly what it sounds like: fruit, citrus, sugar, and water. The result is refreshingly tart with a natural sweetness that you can dial up or down to your taste, finished with ice and a few pretty garnishes if you're feeling fancy.

Combine the strawberries, 1/2 cup sugar, and 1/2 cup water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the strawberries soften and release their juices, about 5โ7 minutes.
Remove the pan from the heat and let the syrup cool for 5 minutes, then pour it through a fine-mesh strainer into a bowl or measuring cup, pressing the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, about 20โ25 minutes.
